Recipe: Spicy Grilled Prawn Skewers

Because of this, many weight loss plans include recipes featuring chilli and cayenne pepper, which go particularly well in soups, curries, casseroles and stews.

This simple recipe for Spicy Grilled Prawn Skewers is a tasty, low calorie dinner option perfect for cold nights.

Prawns are a lean source of protein, are naturally low in fat and are a good source of iron, omega 3 fatty acids, zinc and magnesium, so include them in your diet often.

While prawns are often popular in summer, there’s no reason why they can’t be included in your healthy eating plan in the colder months too!

Ingredients:

  • 16 raw king prawns, peeled, deveined, with tails left intact
  • 1 lemon, cut into quarters
  • 1 avocado, sliced
  • 1 tablespoon honey
  • 1 red chilli, deseeded and sliced into fine pieces
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon cayenne pepper
  • 1 tablespoon lime or lemon juice
  • Wooden skewers
  • Cracked pepper

Method:

Mix together the honey, olive oil, lime (or lemon) juice, cayenne pepper, garlic and chilli in a bowl.

Thread four prawns onto each wooden skewer, then brush each of the prawn skewers with the mixture.

Cover the prawns with ground black pepper and place them in the fridge for half an hour to an hour to marinate.

Preheat a grill or barbecue to medium-high heat, place the prawns under the grill or on the barbecue and cook for 2-3 minutes.

Turn the skewers and cook the other side for 2-3 minutes, until cooked, crispy and golden.

Once the prawns are cooked through, serve with lemon wedges and sliced avocado
